Pulled Pork Sandwiches on the Big Green Egg for Memorial Day? Yes, please!

If you have a Big Green Egg, or are a barbecue aficionado, you are likely familiar with Dr. BBQ. Ray Lampe has seven cookbooks on the market, and is currently working on another. He’s also a Big Green Egg fan. So, we thought it appropriate to share a great recipe of his for pulled pork sandwiches you can make on your Egg, along with his Big Time BBQ Rub & his Carolina Barbecue Sauce. Serve these with cole slaw, baked potatoes, freshly grilled veggies from your Egg…the possibilities are endless!

Pulled Pork Sandwiches on the Big Green Egg

What you’ll need

  • One 7-8 lb pork butt with the fat cap trimmed off
  • 2 tbsp vegetable oil
  • ½ cup apple juice
  • Big Time BBQ Rub (see below)
  • Carolina Barbecue Sauce (also below)
  • Hamburger buns

Make them!

  • Rub the pork with vegetable oil & liberally use the BBQ rub. Chill in the refrigerator for up to 12 hours.
  • Set your Egg for 275°F for indirect cooking. Use hickory & cherry smoke for flavor.
  • Put the pork butt in the Egg & cook until the internal temperature reaches 160°F (about 6-8 hours).
  • Wrap the pork in a double layer of heavy duty aluminum foil. Prior to closing the foil, pour the apple juice over the top. Seal the pork and return to the Egg and cook until the internal temperature reaches 195°F (about another 2-3 hours).
  • Remove the pork from the Egg, open the top of the foil and let rest for about half an hour.
  • Transfer the meat to a large roasting pan and shred the meat, discarding the fat and bones. (It will likely be VERY easy to pull apart at this point!)
  • Add one cup of barbecue sauce to the shredded pork and mix well. Reserve the extra sauce for serving on the side.
  • Should make up to 12 yummy hearty sandwiches!

Big Time BBQ Rub

What you’ll need

  • ½ cup salt
  • ½ cup turbinado sugar
  • ¼ cup granulated brown sugar
  • 1 tbsp granulated garlic
  • 1 tbsp granulated onion
  • 2 tbsp paprika
  • 2 tbsp chili powder
  • 2 tbsp freshly ground black pepper
  • 2 tbsp cayenne
  • 1 tbsp thyme leaves
  • 1 tbsp ground cumin
  • 1 tsp ground nutmeg

Make it!

  • Simply mix all ingredients well & store in an airtight container. This will make about 1½ cups of rub.

Dr. BBQ’s Carolina Barbecue Sauce

What you’ll need

  • 1 cup vinegar
  • 2/3 cup ketchup
  • 2 tsp sugar
  • 1 tsp salt
  • 1 tsp Worcestershire sauce
  • ½ tsp red pepper flakes

Make it!

  • Mix all ingredients well in a small saucepan. Cook over low heat for about five minutes, stirring occasionally. This will make about 2 cups of sauce. Double the recipe if you’d love more!
