Yes…Easter is just around the corner! Sunday, April 20th is just as good a morning as any to use your Big Green Egg. And hey—if you’ve not yet broken out your Egg for spring, here’s the perfect excuse! How about some fabulous Coconut Rum French Toast?!
I would use your Egg to whip up this yummy recipe, complimenting it with some eggs, fresh fruit, orange juice and both bacon & sausage. Here’s how to do it:
Coconut Rum French Toast
What you’ll need:
- One loaf Challah or Brioche (cut into 1/2″ slices
- 4 eggs
- 2 tbsp milk
- 2 tbsp coconut rum
- Cinnamon
To prepare:
Set the Egg at 350 degrees for direct cooking.
Beat together the eggs, milk coconut rum and a couple dashes of cinnamon. Soak the bread in the egg mixture while your Egg is getting up to temperature.
Spray the cooking grid with canola oil to prevent sticking. Place the soaked bread on the grid, cooking on each side about four minutes.
That’s it! You might want to cut up some fresh strawberries and have some fresh blueberries on hand for garnish, along with powdered sugar for dusting and real maple syrup for those that simply must have it.
